Research Activity
Head of the laboratories of “Food Science” of the DAFNAE in Padova and “Enology” at the enological campus of the University of Padova in Conegliano (TV).
Research stage (1994) at the INRA in Montpellier (France).
Reviewer for international journals as expert in food and wine technology, chemistry and biochemistry.
Supervisor of several Master and PhD Theses. Has taken part to national, international and industrial research programmes. Author of about 150 scientific papers and two patents. His research concerned mainly the biochemistry of agro-food products, with particular attention to the macromolecules involved in the food systems. At the moment his main focuses are the chemistry and biochemistry of grape and wine.
